40 Years of Tradition
Noma, located in Santa Monica, is a sushi restaurant that has continued its tradition for over 40 years. Having maintained authentic sushi in the same location for a long time, it recently moved across the street due to the Santa Monica redevelopment, opening a new chapter. The previous location was known for its long wait times, as it intentionally kept a small space to preserve tradition, but with this move, diners can now enjoy their meals in a more spacious and comfortable environment.



The new location is larger, but the atmosphere still centers around a deep Japanese sensibility. The signs, displays, and decorative items inside have all been moved from the previous location, allowing the 40 years of history and stories that Noma has built to be felt throughout the space. It was clear that this was not just a new restaurant, but a space that continues the familiar history.



The Omakase Set Sushi consists of a total of 11 types of sushi, allowing for a balanced enjoyment of different fish and ingredients in a single flow. It also includes House Made Tamago, Daily Premium Soup, and a final Hand Roll, enhancing the overall completeness of the course. Each sushi was seasoned just right, allowing the texture and flavor of the ingredients to shine through, and it was all presented in a stable manner centered around traditional styles.
The Maguro Tokusen is a Tuna Special Limited Edition, allowing diners to taste and compare various cuts of tuna, making it especially satisfying for tuna lovers. The differences in texture and umami between the cuts were clear, making it enjoyable to savor each piece slowly. The Uni Scrambled Toast, highly recommended by returning customers, was an impressive dish where the softly scrambled eggs and uni blended naturally, providing a rich flavor without being overwhelming. It also paired well as a dish that changes the rhythm of the meal.

Overall, Noma is a place that naturally unfolds its long-standing tradition within a new space. While maintaining the familiar flow of authentic sushi, the spaciousness and calm atmosphere allowed for greater focus on the meal itself, which was impressive.
