O'seyo Shabu Shabu

Cozy Shabu Shabu Spot

Located in Pasadena, O’seyo Shabu Shabu is a place where you can enjoy shabu-shabu in a casual atmosphere. The interior is spacious, with seating arranged comfortably, including regular tables and bar-style seating, making it easy to visit alone or with a group. When I visited during lunch hours, I was able to enjoy my meal in a relatively lively atmosphere.

We ordered Angus Prime Beef (Spicy Miso) and Vintage Prime Rib Eye (Sukiyaki) to enjoy with two different broths. The Spicy Miso had a nice level of spiciness and richness, enhancing the natural flavor of the meat without being overwhelming. It also had a subtly sweet taste that reminded me of a familiar tteokbokki broth. The Sukiyaki broth was relatively sweet and smooth, pairing well with the thinly sliced Prime Rib Eye. Switching between the two broths made the flavors distinct, allowing us to enjoy the meal without getting bored.

The meat was sliced thinly, making it easy to cook quickly in the broth. The Angus Prime Beef had a clean and stable flavor, while the Vintage Prime Rib Eye had just the right amount of fat for a softer texture. Adding the vegetables like bok choy, carrots, broccoli, and tofu into the broth alongside the meat created a nice balance of texture and flavor, and in the end, we added udon noodles to wrap up the broth’s flavor nicely.

As sides, we ordered Mixed Tempura, Shumai, and Alaskan Roll. The tempura was crispy on the outside and moist on the inside, while the shumai had a slightly crispy texture on the outside. The ginger on top added a subtle freshness that naturally cut through the greasiness. The Alaskan Roll was relatively light, and the seaweed on top provided an unexpected kick, adding variety to the texture and flavor. It balanced well with the shabu-shabu without being overwhelming. The Iced Green Tea we ordered served as a refreshing finish.
