This time, I would like to introduce Shin Chon, a specialty restaurant for Seolleongtang loved for its rich broth, located in Koreatown. The Seolleongtang here boasts a deep and rich milky broth, thanks to being simmered for a long time every day, delivering nutrition and flavor in every spoonful. With generous portions of meat, chewy glass noodles, and a variety of side dishes to accompany according to your taste, you can enjoy a hearty meal with just one bowl. Due to its comfortable atmosphere and reasonable prices, it has been a favorite among locals for a long time, making it a great place to visit when you crave warm and deep flavors.

During this visit, we ordered doganitang, spicy lean meat seolleongtang, soy sauce shrimp, and cold buckwheat noodles. We decided to choose a variety of dishes, from soup to side menus and refreshing noodle dishes, to enjoy different flavors.

The doganitang had a clear and rich broth with plenty of tendon, allowing for a soft and chewy texture in every spoonful. The clean taste of the broth, which was not greasy, blended well with the mildness of the tendon, making it enjoyable until the last drop, especially when paired with slightly sweet radish kimchi, enhancing the broth’s flavor. The spicy lean meat seolleongtang featured a rich seolleongtang broth with added spicy seasoning, characterized by a refreshing and zesty taste. With generous portions of lean meat, it had a satisfying chew, and the spicy broth felt like it was cleansing my insides. I usually prefer milder flavors, but this spicy lean meat seolleongtang had a strangely addictive taste that made it hard to put down my spoon until the end.

The soy sauce shrimp had a salty yet subtly sweet flavor, making it perfect to eat with rice. The shells were pre-removed for convenience, and when you took a bite, the bouncy shrimp meat and the deep flavor of the soy sauce seasoning filled your mouth. Placing it on top of rice and adding the soy sauce seasoning made it a wonderful side dish on its own. The cold buckwheat noodles had a chewy and elastic texture, making them enjoyable to bite into. The mild yet slightly sweet broth provided a subtle umami flavor that refreshed my palate with every sip. The combination of the cool broth and chewy noodles was a delightful treat to awaken the appetite during the hot summer.
