Hand-Pulled Xi’an Biang Biang Noodles
Located in Santa Ana, Six Alley is a place where you can enjoy Chinese noodle dishes and a variety of side menus in a casual atmosphere. Even though I visited right at opening time, the place quickly filled up with people, indicating its popularity, and overall it had a lively yet relaxed dining vibe.
That day, I ordered a variety of dishes centered around Six Alley’s signature menu items. We filled the table with Three-in-One, Clear Broth Beef Noodles, Sour Soup Dumplings, Braised Pork Roujiamo, Tofu Skin Hot Pot, Spicy Beef with Chef’s Special Chili Oil, as well as Cucumber Salad and Cold Seaweed Salad.
The noodle dishes were overall impressive in their balance of broth and sauce. I chose the Clear Broth Beef Noodles with Mild Spicy, and the clear, light broth combined with a subtle spiciness made it easy to enjoy the meat and noodles cleanly. It wasn’t overwhelming, allowing for a comfortable experience until the end, and the refined taste of the broth provided a stable overall impression. The Three-in-One is a dish that combines three sauces—Zha Jiang, tomato & egg, and oil-poured—into one bowl, where each flavor mixed yet harmonized naturally. It had a familiar taste reminiscent of Korean-style Jajangmyeon, but with less sweetness, leaning towards a lighter and cleaner direction, making it an addictive flavor that you wouldn’t get tired of.
Sour Soup Dumplings are a dumpling soup-style dish, featuring dumplings filled with pork and cabbage served in a tangy broth. The sourness wasn’t too strong, and the broth was smoothly balanced, making it easy to eat without any burden, offering a different kind of fun compared to typical Xiao Long Bao. Braised Pork Roujiamo featured tender pork cooked generously inside a crispy, textured flatbread, providing a satisfying experience with just one bite. Spicy Beef with Chef’s Special Chili Oil had tender meat with a rich yet not overpowering spicy aroma from the oil, making it a great pairing with rice or noodles. Tofu Skin Hot Pot featured a delicate texture of tofu skin coated in garlic and sesame sauce, serving to gently balance out the other dishes on the table.

Overall, Six Alley is a place where you can enjoy a variety of Chinese noodle dishes without any burden. The range of offerings, from broth to noodles, dumplings, and meat dishes, is broad, yet the overall flavor profile is not overwhelming, allowing for a comfortable experience from start to finish. It was easy to understand why the place quickly filled up right after opening, and if you’re looking for a hearty meal in a casual atmosphere, it’s definitely a satisfying choice.
