Authentic Korean Ox Bone Soup
Located in Cypress, Jin Sul Lung Tang is a casual Korean restaurant centered around seolleongtang (ox bone soup). The interior was neatly organized, and there was an overall calm atmosphere without any unnecessary clutter. It was a great place to drop by for a meal without any pressure, and it provided a comfortable space to continue dining even during lunch hours.



The signature dish here is the variety of seolleongtang menus, and during this visit, I ordered Salgogi Sullung Tang. The broth was clear yet rich in flavor, not overly thick or spicy, allowing the natural taste of the long-simmered stock to shine through. Each spoonful revealed a subtly lingering flavor that was impressive, and it paired well with rice without being overwhelming. The broth also contained sweet potato noodles, adding a nice texture, and by adding the green onions provided according to personal preference, one could enjoy a cleaner and sharper taste. The meat was tenderly cooked and blended well with the broth.



The Pork Bulgogi I ordered alongside was well-marinated with a sweet and savory seasoning that complemented the meat nicely, making it a great pairing with rice without being too salty. Its familiar yet light flavor blended seamlessly with the seolleongtang. The Young Radish Bibimbap, a summer special, featured the crunchy texture and refreshing taste of young radish, with a light seasoning that tied everything together without being heavy. The Blanched Squid stood out with its chewy texture and was prepared simply, making it easy to enjoy alongside other dishes. The Dumpling Plate consisted of steamed dumplings filled generously, offering a soft texture that was comfortable to enjoy. The inclusion of fried dumplings allowed for a choice based on personal preference, which was also a nice touch. Each dish had a different texture, making it fun to alternate between them.
The side dishes included radish kimchi, napa cabbage kimchi, macaroni, and seaweed stems, which were familiar accompaniments that naturally complemented the seolleongtang and provided a stable flow to the meal. The radish kimchi had a suitable tanginess and a crunchy texture that paired well with the broth, while the other side dishes played a role in balancing the overall meal without being overwhelming.
