Korean Soul Food Yubu Chobop

Located in Koreatown, Kingyubu is a casual fusion Korean dining space centered around yubu chobop (tofu sushi). The impressive sight of takeout orders being placed was notable, and the interior had relatively ample seating, making it easy to enjoy a light meal during lunch hours. Rather than being extravagant, the simple setup gave off a vibe that was perfect for a quick bite.

The signature dish here is the yubu chobop, which comes with a variety of toppings. I tried several types, including beef brisket, fluffy egg, lemon salmon, spicy tuna, and crab with fish roe, ordering them to share. Each piece was generously topped with different ingredients over the sweet and salty flavor of the tofu, making even one piece quite filling. The beef brisket was light yet flavorful, while the fluffy egg provided a soft texture. The lemon salmon added a refreshing touch, and the crab with fish roe offered a rich, subtly salty taste. The spicy tuna contributed a soft texture with a hint of spiciness, balancing the overall dish.

I ordered the Mini Cupbop with eel avocado and crab with fish roe avocado combination. It was served in a cup, making it easy to enjoy, and offered a different way to experience the ingredient combinations compared to the yubu chobop. The so-tteok so-tteok (sausage and rice cake skewers) ordered alongside had a sweet and salty sauce that paired well with the familiar flavors. For drinks, I chose the Shine Muscat Mojito and Pineapple Lemonade. The Shine Muscat Mojito was relatively refreshing and crisp, while the Pineapple Lemonade brought a light fruitiness that nicely rounded out the meal.
