Hidden Sushi Omakase
Located in Fountain Valley, Momoyama is a specialized omakase restaurant where the chef creates a course using the best ingredients of the day. Sitting at the counter allows you to see the dishes being prepared one by one, making the meal feel like a unique experience. The changing course menu based on seasonal and daily best ingredients is another charm of this place, as you can encounter new dishes every time you visit.



The course starts with Smoked Ikura, followed by Moriawase and Nigiri in succession. The Palate Cleanser served in between refreshes the mouth, allowing for a clearer enjoyment of the next course, and the sequential presentation of dishes creates a natural flow to the meal. Each dish seemed focused on highlighting the freshness of seasonal ingredients, with the texture and flavor of each fish distinctly present, allowing for a full appreciation of the quality of the ingredients. The plating was clean, designed to showcase the ingredients themselves rather than being overly extravagant, making for a visually satisfying dining experience throughout the course.



The most impressive dish in the course was the Smoked Wagyu Tataki. The tender wagyu combined with a subtle smoky flavor deepened the savory taste, adding a unique charm amidst the fish-centric course. Following that, the Hokkaido Uni was notable for its creamy texture that melted smoothly in the mouth and its natural sweetness, allowing for a full appreciation of the fresh uni’s clean flavor. Finally, the Mehikari Temaki was a delightful conclusion to the course, with the crispy seaweed and light fish harmoniously coming together.
As the meal came to an end, the Shiromi Suimono served was a clear and delicate broth that comfortably refreshed the palate, followed by the Crème Brûlée, which had a nicely caramelized top that contrasted beautifully with the rich, smooth custard. The fresh strawberry slices served alongside added a refreshing sweetness, providing a clean finish to the meal. Each dish had its distinct personality, yet they were all seamlessly connected as one course, allowing for an enjoyable experience until the very end.
