Baking Finest Croissants
Fondry, which recently opened in Highland Park, is one of the hottest bakeries right now for croissants. Fondry operates from 9 AM to 12 PM on Fridays through Sundays, and due to its immense popularity, customers can only choose 3 croissants each, yet many leave empty-handed as they sell out quickly.



I arrived at 8 AM, an hour before the store opened, determined to try the croissants, but there were already about 10 people waiting. By the time the store opened, the line stretched to the end of the parking lot, and I realized why they sold out so quickly. I couldn’t help but wonder just how delicious they must be to have such popularity.



The store opened right at 9 AM, and after a long wait, I finally got to go inside. Since each person could only buy 3 croissants, I had to think carefully about what to choose. We picked Framboise Cruffin, Croissant Presse, Pain Au Suisse, Yuzu Meringue Cruffin, Triple Pain Au Chocolate, and Kouign Amann. The first one we tried, Croissant Presse, was incredibly crispy the moment I took a bite, with a rich nutty flavor and buttery aroma filling my mouth. I honestly didn’t expect much, thinking it would be a basic flavor, but I was surprised by the crispiness, which made me excited to try the other breads. Next, we had Pain Au Suisse and Triple Pain Au Chocolate, which looked and tasted quite similar. While Triple Pain Au Chocolate was filled with chocolate, Pain Au Suisse had both chocolate and cream, creating a fantastic harmony with the sweet cream and chocolate melting between the crispy pastry layers.
Framboise Cruffin and Yuzu Meringue Cruffin had a crispy exterior that retained the texture of croissants, each filled with raspberry and yuzu filling, respectively. Even before tasting, their beautiful visuals were a delight to the eyes. Both fillings complemented the croissant perfectly, with just the right balance of tartness and subtle sweetness, giving a luxurious taste. Finally, Kouign Amann had a perfect balance of deep sweetness from caramelized sugar and a slightly salty butter flavor, with a rich nutty taste that made it impossible to stop eating.
