French-Inspired Brunch and Pastries in a Sunlit Interior
Republique is a place so popular that people often line up for it, well-known for its excellent brunch and atmosphere. With its distinctly French-inspired interior and diverse menu, it has become a beloved spot for both locals and tourists.



We arrived on Sunday morning just before opening at 8:05 AM, and there were already about 10 people in line ahead of us, with more joining behind us, which really showed how popular this place is. Once inside the restaurant, you can first choose from a variety of pastries, then order your food, pay, and find a seat. We selected three different pastries, and it was quite difficult to choose because they were all so diverse and beautifully presented. For our brunch menu, we ordered the Short Rib Breakfast Burrito and Kimchi Fried Rice, along with Espresso and Jasmine Tea. After sitting down, I looked around the restaurant and, despite having seen photos multiple times, the light coming through the glass ceiling, the unique decor, and the overall atmosphere instantly lifted my spirits.



The pastries we ordered were Ube Brioche, Honey Cake, and Matcha Yuzu Coconut Bundt Cake. The Ube Brioche had a slightly crispy exterior with a soft and moist brioche inside filled with sweet cream. Topped with rich Ube cream, it offered a delightful balance of savory and sweet flavors, making each bite a burst of richness. The Honey Cake featured moist bread topped with herb leaves, cream, and blackberries, and both the bread and cream were truly delicious. However, personally, I’m not a fan of strong herb flavors, so the herbs felt a bit overpowering to me. The Matcha Yuzu Coconut Bundt Cake combined the deep flavor of matcha cream, the refreshing taste of yuzu cream, and the chewy texture of coconut, creating a truly unique flavor experience. The Ube Brioche and Matcha Yuzu Coconut Bundt Cake were so delicious that I highly recommend them, and they paired wonderfully with the Espresso and Jasmine Tea we ordered.
Next came the Short Rib Breakfast Burrito and Kimchi Fried Rice, which had such an appetizing appearance that I was already excited before tasting them. The Short Rib Breakfast Burrito was a dish that combined a burrito filled with short rib, tomato chili sauce, cheese, and soft eggs. The rich ingredients blended harmoniously, providing a satisfying meal that wasn’t too heavy for breakfast. The Kimchi Fried Rice had a different appearance and taste compared to traditional Korean kimchi fried rice; the kimchi flavor wasn’t as strong as expected, and it tasted more like a rice bowl with meat, pickled radish, and egg. The flavors of the meat and other ingredients were emphasized over the spiciness of the kimchi, so if you were expecting a spicy kimchi fried rice, you might be disappointed, but personally, I enjoyed this subtly addictive flavor.
